Grilled eggplant {marinated} to the olive oil, garlic and thyme

A recipe summer full of flavor, these eggplant grilled flavored with olive oil and thyme will accompany wonderfully a meat, grilled poultry or fish in the oven or on the BBQ served sprinkled with lemon juice, these eggplants will be more flavourful.

A recipe that mark the beginning of the vacation all the more so that this time it was not too the desire nor the time to spend too much time behind the stove. Eggplant marinated at room temperature for 2-3 hours. A marinade based on olive oil, garlic, persil and thyme.

We can carry out these grilled eggplant two ways in the oven or on the BBQ, I have done both methods and I find the practice of cooking in the oven during the winter especially with the snow it is impossible for us to get out the barbecue.

You can serve these grilled eggplant as an accompaniment to red meat, poultry, or fish or simply as a salad composed of lettuce, rocket or shoot of spinach and doused with a good dressing house herb what constitutes a good meal fast and lightweight.

Grilled eggplant marinated in olive oil, garlic and thyme

Cut the eggplants into two. Make 3 incisions on each half of eggplant.

Place the eggplants in a dish. Season the eggplant with salt and pepper. Drizzle with olive oil. Add the chopped garlic, persil and thyme.

Cover with a plastic wrap and leave at room temperature for 2-3 hours.

Preheat the oven to 180 C (350 F). Grill the eggplants for 45 minutes.

Take out the aubergines from the oven, flip, sprinkle with lemon juice and return to oven for 15 minutes basting with their juices.

Arrange the eggplant on a serving dish. Drizzle with juice and serve immediately.

  • 4 c-a-tablespoon olive oil
  • 2 clove garlic, finely chopped
  • 2 c-a-soup persil hache
  • 1 c-a-soup with fresh thyme
  • 2 c-a-soup of lemon juice
  • salt, pepper
