Salad of melon and feta cheese (cucumber and Kalamata olives)

Flavors is irresistible in this salad of melon and feta recipe-summer scented to perfection and refreshing. A salad with a mediterranean-easy, fresh, and very light. Three main ingredients: watermelon, cucumber and feta cheese. When I was a child, I spent my summers at my grand-mother and the major part of our days, we the passions to the beach with my cousins and the whole family. Living not far from the beach, we went there sometimes to walk. All that to say that there were two main things in summer : beach and melon was so refreshing to taste a melon, juicy and sweet. The adults guarded the fresh watermelon as long as possible by burying it in the sand, it was something that every family did this, as for the drink. My grand-mother we bought a crate of watermelon and cantaloupe and it was going like hotcakes.

The preparation of this melon salad is very simple you mix cubes of melon and cucumber in a salad bowl, to increase the flavor and the freshness we add mint leaves (or basil), accompanied with a sauce house dressing (it’s better) and finally we sprinkled the feta cheese I think it adds a nice contrast of salty.

The key to the success of this melon salad is choosing ripe fruit in order to enjoy the full flavor of this salad. I love this kind of salad, in the summer I can’t pass up the melon or watermelon.

I chose to cut the cucumber into cubes and the melon ball, I find it beautiful and presentable if you don’t have a melon baller it doesn’t matter the taste remains the same. Don’t forget the black olives, or better yet, the Kalamata, which are a must in this salad. You can drizzle the salad with olive oil only, or add the red wine vinegar.

A summer salad tasty that we will serve with a meat, grilled fish or simply as a starter in cups, I had already proposed the melon and grilled on the BBQ and drizzled with vinegar balsamic.

Cut the feta into cubes and add to the bowl.

Season with salt, pepper and drizzle of olive oil and red wine vinegar. Mix.

Sprinkle with mint (or basil) chopped and olives pitted.

Serve well chilled.
