Tart raspberries {almond cream}

The tart raspberries is one of my dessert favorites, and this one in particular which is based on almond cream with an irresistible base of shortbread with almonds that are sprinkled with almond slivers before baking. A dessert that you can accompany a scoop of ice cream or sprinkle with icing sugar or coat with a plaster solution.

This pie is prepared, ideally with fresh raspberries as it’s the full season or frozen if it is in the off-season that will be just as good.

The last time I had proposed the tarts with blueberries (the blueberries) with a wonderful shortbread. The base I wanted to prepare the tart raspberries to Sarah, and saw that I used a pie plate smaller than his, I still had scraps of dough, which helped me exactly to prepare the tarts.

A pie that you can carry out with other fresh or frozen fruits as well as blueberries (blueberries) strawberries or depending on the season.

So here’s the tart with the raspberries on the base of a cream of almond. A pie is super delicious and I recommend to let it cool down it will be all the better. My daughter Salma, who is not very fan of raspberry has loved this pie.

I used a rectangular mould smaller than that of Sarah, so the cream was a little thicker. if you use a mold of less than 30 cm remember to cook your pie a little longer, as was the case for me, or even mini-tarts.

If you decide to prepare the shortbread dough in advance, keep in mind to film it and put it in the freezer, it will thaw by leaving it on the countertop a few hours at room temperature.

Prepare the cookie dough the recipe is HERE
Spread the dough, roll between 2 sheets of baking paper


Return the dough to the pan buttered and floured. Create the mold and cut the edges that exceed.

Prick the dough with a fork and set aside to cool.


Prepare the cream:

Work in butter cream

Pour this preparation on the dough. Then place the raspberries, pushing them down slightly. Sprinkle with slivered almonds.

Bake in a 180 preheated oven for 30 min. Let cool before serving

  • shortbread with almonds
  • 250 grams raspberries fresh or frozen
  • For the cream, almond/hazelnut:
  • 60 grams of almonds powder
  • 60 g of hazelnut powder (I used almond powder)
  • 3 eggs
  • 120 g butter at room temperature
  • 120 grs of icing sugar
  • 1 tablespoons of flour
  • 100 grs of almond slivers
  • Icing sugar for decoration
  1. Prepare the shortbread dough
  2. Spread the dough on a sheet of baking paper
  3. Then return to the pan buttered and floured. Create the mold and trim the excess edges
  4. Prick the dough with a fork and set aside in a cool
  5. Prepare the cream:
