Fruit tart flag – Croatian


This pie completes my series of pie flag. Croatia is a beautiful country that I had the opportunity to discover the last year. She won then the championship of the world of gathering olives.   • 250 g of wheat flour T65
  • 125 g of soft butter
  • 100 g of sugar
  • 1 egg (+ 1 to 2 tablespoons water if necessary)

1. Cut the butter into small cubes. Put it in a bowl with the flour and mix with the fingertips until you have a preparation for sandy.
2. Add the sugar and mix. And then stir in the beaten egg. Without too knead, mix the dough until you have a homogeneous ball of dough.
3. Surround with a food film and book 30 minutes in the refrigerator.
4. Then lay it out on a floured work surface and go for it-in a pie pan, rectangular, 21 x 28 cm. Cook the dough to white 25 min in the preheated oven at 180°C.
5. Remove from oven and let cool completely.

6. Heat the milk in a saucepan with the vanilla pod cut in two in the length. As soon as boiling, remove from the heat and scrape the pod to collect the seeds.
7. In a bowl, mix the sugar and cornstarch.
8. In a bowl, beat the eggs in the omelet. Spoon the mixture sugar/cornstarch.
9. Dilute little by little with the milk to lukewarm. Then replace the batter in the pan and cook on medium heat until the cream thickens. Attention to stir well so that the custard does not catch on the bottom of the pot.
10. Pour the pastry cream on the bottom of pie. Let it cool down.
11. Cut the banana into very thin slices and place in center of pie. Brush a little lemon juice with a brush so that the banana is only blackens not.
12. Remove the blueberries and currants.
13. To finalize the flag of the Croatia, you can draw the crest central alternating raspberries, peaks of whipped cream and mint leaves.
