Pie cheesecake lemon – flag English

This is another recipe in my series pie flag ! This time, this delicious pie is the England : garnished with a lemon mousse creamy, these are the raspberries that drew the famous cross of st. George on the flag of England. This pie is light and absolutely delicious. You can enjoy with a cup of tea perhaps ?

For the dough :

  • 250 g of wheat flour T65
  • 125 g of soft butter
  • 100 g of sugar-golden cane
  • 1 egg (+ 1 to 2 tablespoons water if necessary)

For the shortbread dough :

1. Mix together the butter and the flour until you get a sandy mixture.
2. Add the sugar and mix.
3. Add the beaten egg and work the dough for a ball.
4. Flatten slightly, cover with a food film and let rest 30 minutes in the refrigerator.
5. Spread it on a floured work surface. Then go for it-in a pie pan, rectangular, 28 x 21cm.
6. Make a cooking to white (see the technique in video of cooking to white on my YouTube channel) : cover the dough with parchment paper then pour in white beans or apricot pits for lester the dough. Cook 15 minutes at 180°C. Remove the paper with the kernels and continue cooking for 10 min.
7. Let cool completely before unmould.

For the filling :

8. In a bowl, mix the sweetened condensed milk and lemon juice.

9. Whisk in the cream whipped stiff. Stir in the bowl.

10. Let take at least 2 h in the refrigerator.

11. Decorate with raspberries to form the red cross from the English flag.
