Pie chocolate-raspberry pineapple – belgian flag

My friend.e.s the belgians, many of you come on the site and have done for many years. So here’s your pie in the colors of the belgian flag, which I found obvious to chocolate !

For the shortbread dough :

1. In a bowl, mix the almond and the sugar. Stir in the beaten egg, water and almond powder.
2. Add the flour and mix until you have a homogeneous paste.
3. Roll out the dough on a floured work surface to a thickness of 1/2 cm.
4. Go for it-in a pie mold rectangular of about 28×21 cm. Cook in white 25 min. (See the technical video for bake a pie to white). Then leave to cool.

For the filling :

5. Place the crushed chocolate in a glass salad bowl. Boil the cream and pour it over the chocolate. Stir until the ganache is smooth.
6. Pour the ganache warm on the bottom of pie and let cool completely.
7. Peel the pineapple and cut the flesh into triangles. Grate the chocolate to make shavings.
8. Decorate the pie with the colors of the belgian flag with the colours black – yellow – red.
